Ingredients for 6 servings
- 500 grams of fresh cheese in a strainer
- 2 tablespoons of thick crème fraîche
- 2 eggs
- 1 tablespoon of flour
- 1 pinch of salt and pepper
Drain the fresh cheese well.
In a bowl, whisk together the fresh cheese, egg yolks and cream.
Add a pinch of salt and pepper as well as the flour. The mixture should be very smooth.
Gently fold in the egg whites beaten until stiff peaks form.
Pour the mixture into the buttered soufflé dish.
Bake in a preheated oven at 180°C for 30 minutes.
The soufflé should rise: let the crust form and brown.
When it comes out of the oven serve it immediately, hot, without unmolding it
