1 Rinse your cucumbers, dry them, and slice them thinly with the skin on. Place them in a salad bowl, sprinkle with fine sea salt, and refrigerate covered for 1 hour.
2 In another bowl, pour the vinegar, add salt, then mix in the horseradish and cream. Drain your cucumber slices and blend everything together with a spoon. Just before serving, add your freshly chopped mint.
3 Serve in a nice dish, surrounded with your radish slices and a beautiful bunch of mint. This dish works beautifully with smoked fish like tuna, trout, or salmon.
You can prepare this recipe ahead of time, and just before serving, add your freshly chopped mint leaves.
