Cassis The Cassis appellation d'origine contrôlée was among the first to be officially recognized in 1936. It is produced by 12 estates that cultivate 196 hectares of vineyards exclusively within the commune of Cassis. The Cassis vineyard benefits from a favorable microclimate thanks to protection from surrounding hills that block the mistral wind. Cassis soils are varied, ranging from shallow, eroded soils to brown soils developed on colluvial deposits. These conditions allow for an annual production of one million bottles of quality wine. Harvesting of Cassis wines is done by hand, and the grape varieties used for white wines include Ugni blanc, Clairette, Marsanne, Doucillon (the local name for Bourboulenc) and Sauvignon. The red and rosé wines of Cassis are made from Grenache, Cinsault and Mourvèdre. Château Barbanau offers insight into the various blends of these varieties.
