14 oz (400 g) rhubarb stems
4 organic peeled bananas
2 beautiful peeled and cored apples
3.5 oz (100 g) powdered sugar or brown sugar
1 packet of vanilla sugar or the inside of a scraped pod
3 eggs 0 or 1
0.8 cup (20 cl) liquid cream (30%)
1 butter shortbread tart base *
Step-by-step directions
1 Peel your rhubarb stems, then cut them into squares, place them in a saucepan, pour 0.8 cup (20cl) of water 1.75 oz (50g) sugar or brown sugar and the vanilla sugar packet then cook on the stove for about ten minutes.
2 Meanwhile, cut your apples into approximately 1cm cubes and your bananas the same way.
3 Place your dough on your mold and flute* around it then put it in the fridge.
4 When your rhubarb marmalade has almost caramelized, remove from heat, then incorporate your apple and banana cubes, stir gently then add the rest of your sugar, beaten eggs and liquid cream, stir with a spatula then wait 5 minutes.
5 Preheat the oven to 180°(th6)
6 Then pour your mixture into your tart base and bake in the middle of the oven for 30 minutes. Some go with a small scoop of vanilla ice cream, it's indulgent but it works. The buttered shortcrust base is the foundation, so don't skimp there. Can I replace the liquid cream with plain yogurt or thick crème fraîche?
Yes, but not 1:1. Liquid cream at 30% brings softness during baking. With plain yogurt (same amount), the tart will be lighter but less rich. With thick crème fraîche, reduce to 80 ml and dilute with a little warm milk to keep the mixture fluid before baking.
How long does the tart keep in the fridge? Can you freeze it?
3 days in the fridge under food film. For freezing, let it cool completely, then wrap the slice or whole tart. It keeps 1 month frozen. Defrost in the fridge 4-5 hours before serving, not at room temperature (the crust would get soggy).
Why must the rhubarb-fruit mixture rest for 5 minutes after adding eggs and cream?
This rest allows the fruit dice to soak slightly into the mixture without falling apart. If you pour immediately, the fruit floats to the top and the cream sinks to the bottom. These 5 minutes create a gentle binding that holds everything together during baking.
