Ingredients for 8 servings
- 500 g (17.75 oz) of carrots
- 10 cl (0.4 cup) of milk
- 3 eggs
- 60 g (2.1 oz) of flour
- 50 g (1.75 oz) of grated cheese
- 180 g (6.25 oz) of fresh goat cheese
- 3 tablespoons of crème fraîche
- salt pepper spices of your choice
1 Preheat your oven to 210°C (410°F).
2 Peel the carrots then cut them into pieces. Steam the carrots for 20 minutes to preserve the flavor.
3 Blend the carrots with the milk, eggs, flour, and grated cheese.
Set aside in a bowl.
4 Blend the fresh goat cheese with the crème fraîche then season to your taste.
Set aside in another bowl.
5 Take oven-safe ramekins. Butter the ramekins. Fill the ramekins with a layer of the carrot mixture, a layer of the goat cheese mixture and finish with a layer of the carrot mixture. Do not overfill the ramekins as there is a risk of overflow during cooking.
6 Place the ramekins in a dish with water. Cook in a water bath for approximately 25 minutes.
7 Serve chilled accompanied by a green salad and beets to add color to the plate.
