For the anise cake:
1 coffee cup of sugar
1 coffee cup of white wine
1 coffee cup of peanut oil
1 pinch of yeast
Zest of lemon or orange, grated
1.1 oz (30 g) anise seeds
17.75 oz (500 g) flour (approximately 5 cups)
3 packets of vanilla sugar
Step-by-step directions
1 Mix all the ingredients together: sugar, white wine, peanut oil, grated lemon or orange zest, anise seeds, flour, vanilla sugar, and yeast.
2 Mix everything together and add flour if the dough sticks to your fingers.
3 Take a small piece of dough slightly larger than a walnut and shape it into a ball. Roll this ball between your hands to form a log, then join the two ends by overlapping them.
4 Butter a baking dish and place each formed cake side by side.
5 Bake in the oven at thermostat 6 for approximately 25 minutes.

Anise cake is your morning cake with coffee, the one you bite into at four o'clock. Historically it's a Mediterranean classic, very popular in Provence and Andalusia, where anise grows and spices are affordable. Here we make it with dry white wine, which gives it lasting moisture and light acidity.

How long does this cake keep?
Three days at room temperature in an airtight box or wrapped in paper. In the fridge, count on 5 days easily. Freezes well: 2 months no problem, thaw at room temperature overnight.
How do you know if the dough is the right consistency before shaping?
The dough shouldn't stick to your fingers. If it does, add flour one teaspoon at a time. It should roll easily into a rope without crumbling. Too dry? A few drops of white wine, no more.
