Ingredients for 6 servings
- 50 g (1.75 oz) speculoos
- 2 eggs
- 2 tablespoons liquid honey
- 1 sweetened plain yogurt
- 200 g (7 oz) flour
- 1 teaspoon baking powder
- 5 cl (1.7 fl oz) oil
- 2 apples + a little brown sugar for the top
1 Preheat the oven to 180-200° (Thermostat 6-7)
2/ Put the speculoos in a food processor to reduce them to powder.
3/ In a bowl beat the eggs with the honey.
4/ Add the yogurt then the speculoos powder, mix.
5/ Incorporate the flour mixed with the baking powder then the oil. Mix the batter well.
6/ Peel the apples and cut them into small pieces, add them to the batter, stir.
7/ Pour into a buttered and floured square mold. Sprinkle with powdered cane sugar. Bake for 20 to 25 minutes. It's ready.
