Ingredients for 4 servings
- Tomato and Line-caught Mackerel Salad with Mustard Sauce,
- 2 Beautiful "Organic" or Garden tomatoes
- 2 finely sliced shallots (gray if you have them)
- 2 cloves of garlic, degerminated, chopped and fried in olive oil.
- 10 finely sliced mint leaves.
- 4 mackerel fillets, deboned.
- 40 g (1.4 oz) of whole grain mustard
- 1 teaspoon of powdered sugar
- 8 cl (0.3 cup) of cider vinegar
- 8 cl (0.3 cup) of rosé wine
- olive oil
- salt and ground and crushed pepper.
