Ingredients for 2 servings
- 1 beautiful sea bream
- fennel
- 1 tomato
- 1 onion
- 1 lemon
- a little olive oil
- salt pepper 5 peppercorns from the mill
- parsley
- red spices to put on the bones
1/ preheat the oven (thermostat 200)
2/ prepare your fish, gut it, scale it, rinse it. Salt and pepper the fish, don't forget the inside. Stuff it with fennel branches and a little finely chopped onion. Add lemon to the fish.
3/ In an oven-safe dish, put oil at the bottom of the dish so it doesn't stick, place the prepared sea bream. Add the tomatoes cut into slices around the fish as well as the onion and add 10 to 15 cl of water.
4/ Put in the oven and let cook for 30 minutes, basting from time to time. Check the cooking after 30 minutes, add a little more time if the sea bream needs more cooking.
5/ Remove and let cool a bit. Place the sea bream in a dish and cut along the dorsal bone lengthwise and gently fold the fillet into the dish, repeat the operation for the other side.
6/ For the decoration of the bone, take a red spice (I used tandoori) between your fingers and stick it on the bones. Put your cooked tomatoes and onion all around.
It's ready!!!
