Ingredients for 8 servings
- 500 g of carrots
- 10 cl of milk
- 3 eggs
- 60 g of flour
- 50 g of grated cheese
- 180 g of fresh goat cheese
- 3 tablespoons of crème fraîche
- salt pepper spices of your choice
1- Preheat your oven to 210°C.
2- Peel the carrots then cut them into pieces. Steam the carrots for 20 minutes to preserve the flavor.
3- Blend the carrots with the milk, eggs, flour, and grated cheese.
Set aside in a bowl.
4- Blend the fresh goat cheese with the crème fraîche then season to your taste.
Set aside in another bowl.
5- Take oven-safe ramekins. Butter the ramekins. Fill the ramekins with a layer of the carrot mixture, a layer of the goat cheese mixture and finish with a layer of the carrot mixture. Do not overfill the ramekins as there is a risk of overflow during cooking.
6- Place the ramekins in a dish with water. Cook in a water bath for approximately 25 minutes.
7- Serve chilled accompanied by a green salad and beets to add color to the plate.
