Ingredients for 6 servings
- 4 eggs (4 yolks + 4 whites)
- 130 g sugar
- 120 g flour
- 80 g warm butter
- 1 packet baking powder
- 1 untreated lemon (juice and blanched zests)
1/ Preheat your oven to 180° (th6).
2/ In a bowl mix the yolks and sugar until they whiten.
3/ incorporate the melted butter (but not too hot), lemon juice and zests then the baking powder and flour.
4/ Beat the whites until stiff peaks form and add a pinch of sugar at the end. incorporate them into your mixture first by mixing with a whisk then very gently by lifting with a wooden spatula.
5/ Spread the batter in your non-stick mold (a Manqué about 20cm in diameter and 7 to 8 cm thick)
6/ Bake for 20 minutes. (check the cooking by inserting the tip of a knife, it should come out hot and dry).
Once cooled you can dust it with powdered sugar
