Ingredients for 2 servings
- 3 eggs
- 750 g of chicory
- 100 g of crumbled blue cheese
- 50 g of grated Gruyère
- 1 large chopped onion
- 1 minced garlic clove
- 25 g of butter
- 1 cup of crème fraîche
- salt and pepper
1 - Clean the chicory, cut into small pieces then cook in boiling salted water for about ten minutes. Drain well and set aside. Preheat your oven to 175°C.
2 - Gently sauté the garlic and onion in the butter, add your chicory and stir.
3 - In a bowl beat the eggs, crumbled blue cheese, salt and pepper, add the chicory and the cup of cream, stir everything together.
4 - Fill your individual dishes and sprinkle grated Gruyère on top. Bake at 175° for 15 minutes (watch carefully).
