Ingredients for 6 servings

Lobster "à l'américaine" for 8 persons :
  • 2 lobsters (alive)
  • 15 centiliters (1/3 pint) olive oil
  • 2 onions thinly sliced
  • 4 shallots thinly sliced
  • 2 garlic cloves, degermed, crushed and thinly chopped
  • 4 fresh tomatoes, peeled, without their seeds and roughly chopped
  • 150 grams (1/3 lb) tomatoe purée
  • 30 centiliters (2/3 pint) concentrated fish stock
  • 1/2 liter (1.1 pint) dry white wine
  • 10 grams (1/3 oz) dry tarragon (or a few fresh tarragon leaves)
  • 5 centiliters (2 fl oz) Cognac brandy
  • table salt, black pepper in powder and semi hot red pepper in powder
For the sauce thickening :
  • 100 grams (4 oz) butter
  • 100 grams (4 oz) wheat flour
  • 5 centiliters (2 fl oz) Cognac brandy
  • 2 teaspoonfulls chopped chervil or parsley
