Bourgogne Aligoté is a dry white wine produced in the Burgundy region of France. It is made from the Aligoté grape, an indigenous variety to the region. This wine is known for its fresh, mineral character, with aromas of green apple, lemon, and peach. It is often considered an ideal aperitif wine, but can also be enjoyed with light dishes such as fish and seafood. Aligoté has a rich history in Burgundy, having been cultivated there for centuries. It was largely displaced by Chardonnay and Pinot Noir varieties, but a small number of dedicated producers continue to make this wine in traditional styles. Aligoté production is primarily concentrated in the villages of Bouzeron and Rully, where chalky soils and ideal climatic conditions allow the grapes to ripen to perfection. Wines from Bouzeron tend to be more fruity and less mineral than those from Rully, which display more earthy, complex notes.
