Ah, clementines! These little orange marvels that brighten our tables from November onwards and remind us, year after year, that winter can be sweet and gentle. Originally from Tangier in Morocco, the clementine is actually a natural hybrid between the mandarin tree and the bitter orange tree, discovered in the early twentieth century. Its name? It comes from Father Clément Rodier, a French missionary who popularized it. A lovely story for a small fruit that has won the hearts of Mediterranean people and far beyond.

What fascinates me most about the clementine is its versatility in the kitchen. Contrary to what one might think, it is not just a fruit to snack on between meals. Chefs around the world adore it, particularly because its sweet and slightly tangy juice pairs exceptionally well with premium proteins and winter vegetables. I remember, during a trip to Corsica, tasting seafood prepared with a clementine-based sauce, the balance was perfect. That is actually what inspired some of my creations at AFTouch-Cuisine.

In the kitchen, the clementine offers countless possibilities. You can use it fresh, of course, but also candy it, caramelize it, infuse it in delicate sauces or even reduce it to compote. Its thin skin makes zesting easy, that precious element which brings a sophisticated note of bitterness to both sweet and savory dishes. Our recipes reflect this diversity, from Candied Clementine Segments, which capture the full substance of the fruit, to more surprising creations such as Pumpkin and Corsican Clementine Cream, where the citrus comes to dance with the sweetness of the squash.

One of my favorite creations remains the Clementine Gratin, a dessert that plays on contrasts of temperature and texture. But I must admit that clementines also shine in savory cooking, particularly with seafood. Dubarry moreover masterfully grasped this delicate harmony when discussing the sauce in our recipe Scallops and Pink Shrimp. He emphasizes how crucial it is not to overwhelm the delicate flavors of these noble fruits with an overpowering sauce. That is precisely what must be remembered, the clementine must enhance, not dominate.

For those seeking something lighter and more poetic, Clementine Petals offer a delicate presentation and an airy tasting experience. It is the type of recipe that transforms a simple fruit into a work of art on the plate.

Clementine season is now. Let us take full advantage of it, because these fruits are only on our shelves for a few months. Whether candied, reduced to juice, incorporated into refined dishes or simply peeled by hand, they deserve our full attention. Our recipes invite you to rediscover this extraordinary little citrus fruit from every angle. To your knives!
