In North Africa, salt meadow lamb, those sheep raised near coastal areas, is particularly prized for its delicate flavour. This is indeed what inspired me when creating my recipe for Tajine d'agneau de prés-salés, where this delicate meat shines brilliantly.

What is fascinating about tajine is its ability to absorb regional flavours. Depending on the terrain and traditions, dried fruits, seasonal vegetables or surprising local touches are added.
